Try my Middle Eastern-inspired Tartine recipe, a French open-faced sandwich topped with grilled Halloumi, Avocado and Pomegranate Molasses! This easy yet special tartine recipe is the perfect little bite to offer to guests along with a cool drink.
Since I made these stuffed mushrooms a couple weeks ago, halloumi has been on my mind a lot. I kept coming back to it as if my brain was sending me a clear message: I WANT MORE GRILLED HALOUMI!
Ok brain- I got it. Here's more halloumi for you, paired with avocado and pomegranate molasses and presented to you as my new favourite Tartine recipe.
Does this tartine recipe sound like a weird combination to you? Because, really, I think it's delicious. I already loved the idea when it came up in my head but when I took my first bite, well...I loved it even more. Would you give this tartine recipe a try?
If you're confused about thetartine thing, it's just a fancy (and French) way to say open-faced sandwich. So if we summarize this tartine recipe, we have:
- A toasted slice of crusty bread (yum),
- topped with mashed avocado (yum), and
- melty, grilled halloumi cheese (yum).
- The pomegranate molasses is like the cherry on top, but really,if that scares you, just leave it out. Just know that you're missing out on something BIG. 😉
Tartine isthe perfect happy hour snack to nibble on while sipping on a glass of wine. They also make a great appetizer before a large meal. Hey, and what about Sunday brunch, what about midnight munchies.

Grilled Halloumi, Avocado and Pomegranate Molasses Tartine

Ingredients
- 5ozhalloumi cheese150 g
- 6slicesciabatta breador any similar bread
- 1ripe avocado
- 3tbsppomegranate molasses
Instructions
Start with halloumi. Cut the cheese block into six 0.5 inches (about 1 cm) slices (you'll have leftover halloumi). Heat a non-stick skillet over medium-high heat. Grill halloumi slices about one minute on each side or until golden brown. Set aside. When halloumi is cool enough to handle, cut each slice into three pieces.
Toast the bread slices. In a small bowl, mash the avocado and season with salt and pepper to taste.
Spread 1 heaping tablespoon of mashed avocado on each bread slice. Top with grilled halloumi and drizzle with pomegranate molasses. Serve immediately.
Recipe Notes
If you have pomegranate juice, you don't need to buy pomegranate molasses. You can easily make your own at home. See this recipe for example.

Must admit avocado and halloumi is a combination I love but I have never heard of pomegranate molasses. Is it like a syrup? I'm thinking if it is the sweetness probably goes really nicely with the salty halloumi. The only think i can think to substitute from my cupboards would be maple syrup...could be very weird?

Hey Amy 🙂 yes, pomegranate molasses is like very thick pomegranate juice. It's made with pom juice, sugar and a splash of lemon. I'm not sure about maple syrup...could be weird indeed haha. You could try these with pomegranate arils maybe?
